Food Matching Note:
Fantastic with freshwater fish, but has the concentration to match white meats.
Tasting Note:
Light golden, bright in glass. Intense nose of ripe lemons and spice. Impressively textured palate: dry but full with excellent oak integration. Mineral finish.
Vinification Note:
The grapes are exclusively from Ottella's own vineyards in San Benedetto di Lugana, near Lake Garda. The training system is double guyot. Molceo is made with late harvest grapes which are carefully hand harvested into 17 kg boxes and are subesequently laid out to dry for 25 days in 4 kg boxes for a slight "passito" dimension. After a short maceration on the skins, the wine is femented in barrique. It is bottled after a year in wood.
