This wine could be consumed as a dessert in its own right. Great food pairings include chocolate pudding, crepes, fruit desserts, Tyrolean pastries such as poppy-seed strudel, foie gras, Roquefort cheese. Serve lightly chilled.
Tasting Note:
"Rosatum", or "Rose Wine", was the name given by the Romans to a wine scented with attar of roses. The minute yields result in a delicately sweet wine characterised by a ripe aroma of roses and silky opulence.
It is bright ruby in colour with a delicate bouquet of roses and red berry fruits; spicy on the palate, smooth and luscious with an opulent sweetness cut by fruity acidity.
Vinification Note:
The grape variety is Moscato Rosa, a red member of the Muscat family which derives its name from its scent and flavour of roses. It is grown in vertical espalier-trained vines at a density of around 5,000 plants per hectare from selected vineyards around Colterenzio at an altitude of 450 metres. Soils are medium structured with well-drained sand or gravel moraine deposits. The microclimate is cool with wide diurnal temperature variations. After harvest the crushed berries are left to soak briefly prior to pressing. Fermentation takes place using temperature control until the desired level of alcohol is reached. A proportion of the grapes are left to dry for several months and then vinified in the same way, after which a final blend is made and the wine continues to mature in stainless steel. This process is highly intensive and results in overall yields of only 12hl/ha, very high dry extract of 37 g/l and a good residual sugar to acidity balance (85 g/l and 5.4 g/l respectively).
