Food Matching Note:
A great partner to hearty, rustic dishes such as rich vegetable soups or roasted red meat. Delicious with a pan fried haunch of wild boar with tomatoes and beans.
Tasting Note:
Brick red in colour with purplish depths, the nose is enticingly forward with aromas of cherries and raspberries and hints of plums and vanilla. Medium bodied, fruit driven and rounded with crunchy black cherry flavours and a balancing structure. The finish is clean and textured.
Vinification Note:
Sourced from south and southwesterly facing vineyards planted between 70 and 130m a.s.l. on sandstone soils. The vines were planted in the late 1990's with 6600 vines per hectare, they are spur-cordon trained and hand harvested from the second week of September. Fermentation takes place between 28-30°C in stainless steel, skin maceration is 16 days for the Sangiovese and 18 days for the Cabernet Sauvignon. Ageing is in small French and American oak barrels (225 lt. / 30% new) for 12 months.
