Food Matching Note:
It is excellent enjoyed on its own, or with Italian pasta dishes, grilled fish and dishes of white meats.
Serve lightly chilled, 12° C.
Tasting Note:
Pale yellow with greenish reflexes; nutty on the nose with a hint of exotic fruits such as mango and honeydew melon overlaying a discreet aroma of oak; full and broad on the palate, the richness cut by firm acidity.
Vinification Note:
The grapes are carefully placed whole and undamaged into the press. The juice is them filled into 225 litre French oak barriques, where it is fermented at 24° C, after which the young wine undergoes malo-lactic fermentation and matured on the fine lees. After 11 months' barrique-aging the wine is matured for several months in bottle prior to release.
