Food Matching Note:
With full flavoured red meat such as beef, lamb or game. Excellent with soft, veiny blue cheese.
Tasting Note:
A behemoth of a nose, concentrated, complex and commanding. The palate is full and structured but surprisingly well rounded with black fruit, liquorice and mocha flavours, hints of rose petal and a defiant finish.
Vinification Note:
HARVEST: Manual, with accurate grape selection in the vineyard
TIME OF HARVEST: First ten days in October
TERRAIN: Calcareous-marly, with sandy veins
LOCATION: “Vigna del Gris” vineyard, part of the Ginestra terroir within the commune of Monforte d’Alba, south/southeasterly exposed
VINIFICATION: Maceration on the skins in rotary fermenters for about 7-8 days
ÉLEVAGE: 24 months in oak, approximately 12 months in bottle
