Food Matching Note:
Perfect to accompany roasted red meat dishes, in particular game, such as wild boar, duck or venison where its structure and acidity will balance the rich flavours.
Tasting Note:
The Barolo Lazzarito has a garnet colour with orange reflections, its bouquet is intense and fruity with scents of strawberries and mint; the taste is very complex, with a full structure.
Vinification Note:
This vineyard consists of only 2.6 hectares facing south/southwest in the Serralunga d'Alba area, and is the property of Fontanafredda. The vines grow in calcareous, dry soil which is rich in tufa and is therefore not very fertile and produces grapes of great quality. Fermentation is carried out in large vats at a controlled temperature, lasting from 15-20 days. The wine is then aged in Slovenian oak casks for at least 2 years and then in bottle for one year before release.
