Giovanni Puiatti’s father Vittorio developed what is now Italy’s dominant white winemaking technique, frequently called the “Metodo Puiatti”. Only 100% stainless steel is used during both the fermentation and ageing of the wines. This method is currently so well entrenched that it is easy to forget that it was once considered revolutionary and is responsible for the super-clean, bright flavours of Puiatti’s wines. In 2009 Puiatti moved into their new cellar, a few miles away from the previous one, in the Zuccole area. The new building is the first cellar in Friuli to be constructed using only steel, concrete and glass, reflecting his motto of ‘Save a Tree, Drink Puiatti’ – in other words, no oak is used in any of the wines. Puiatti is
now part of an important wine group in Italy called Tenimenti Angelini.

The Blanc de Blancs is a unique NV Spumante made by the méthode traditionelle, from 100% Chardonnay. Fine and elegant, complex and delicate, aromatic and fragrant, it is perfect as an aperitif, and can also age well.
